About this Recipe

This is the perfect summer salad.  Make this the day of, or even better, make a day ahead of time and the better the pasta salad will be! Feel free to make this pasta dish your own.  Add your favorite vegetables or cheeses, add spicy peppers or a simple squirt your favorite hot sauce will do the trick to kick it up a bit! Top with some grilled chicken or fish and you’ve got yourself a delicious dinner.

1 1/4 cup orzo pasta

9 oz jar of Andy’s Tapas Sun Dried Tomato Oil

1/4 cup diced red onion

4 oz cubed sharp cheddar cheese

1/4 cup diced red bell pepper

5 basil leaves sliced thin for garnish

*substitute or add any of your favorite veggies or 

cheeses 

Step 1

Cook orzo pasta (follow instructions on pasta box).

Step 2

Strain pasta and put in a large mixing bowl.

Step 3

Add Andy’s Tapas Sun Dried Tomato Oil and the rest of the ingredients.

Step 4

Mix well, cover and chill before serving.

Step 5

Serve cold and garnish with sliced basil.
